Here are some examples:
- The proportion of oak actually used to make staves is very low, at around 20%. The TTF Group, which pays constant attention to optimal use of a rare and living raw materials, refines its processes to improve its use of the wood. Its research has covered the entire chain, from tree to barrel, via timber mills, optimization of use of staves and, in particular, re-use of "residues" in the manufacture of wood products for wine-making.
- Precise measurement of the barrel's contribution in terms of tannins in development of the wine is a major challenge in refining wine-making and responding to specific needs of grape-growers and wine-makers. The Group has developed precise and sophisticated heating procedures enabling efficient control depending on the target objectives.
- Wood products in wine-making originally served an economic purpose since it is always less costly to place wood in wine, in a process known as infusion, than to age wine in casks. Research and innovation have made it a business in its own right which, going beyond re-use of offcuts from barrel- and cask-making, offers an alternative to traditional cask-ageing, thereby expanding the range of eligible wines.
